Ingredients:
1 cup sour cream
1/4 cup plus 1 tablespoon rice vinegar
3 scallions, white and tender green parts only, thinly sliced
Kosher salt and freshly ground pepper
1 cup Sriracha chile sauce
1 tablespoon sambal oelek or other Asian chile sauce
1 stick cold unsalted butter, cut into 8 pieces
Vegetable oil, for frying
3 pounds chicken wings, tips discarded, wings cut in half at the joint
method:
1 ) In a large bowl , mix together the sour cream and 2 tbsp rice vinegar and scallions . Sprinkle with salt and pepper . Cover and place in refrigerator .
2 ) In a saucepan , mix Sriracha , sambal oelek and the remaining 3 tbsp rice vinegar and boil . Remove from the fire and whisk whisk and add the butter to melt it . Set aside .
3 ) In a heat oil 2 inches deep in the pan . I -fried ( in batches ) until golden brown and malting it be 5 minutes . Filter paper towels and sprinkle with salt and pepper .
4 ) Put on a large platter and pour the hot chile sauce over the wings and mix well . Done !
